Punjabi Egg Curry (Anda Curry) Recipe

Food at dhaba is one of the tastiest food in India. You can make such tasty & delicious food at home in quick time. This time we are bringing Punjabi egg curry that can be made in just 40 minutes. One can eat it with plain paratha, roti or flavored rice like pulao, jeera rice, biryani rice. Coconut rice or any biryani varieties.

To male egg gravy, Need tomato paste, onion paste & ginger garlic paste. These all increase the taste of Punjabi egg curry. If you haven’t much time then you may make it with all tomato, ginger garlic ground, onion together.

Ingredients

  • Boiled Eggs: 4 to 5
  • Cubed Onions: 1 ½ cups
  • Oil: 2 tbsp
  • Bay Leaf: 1 small
  • Cinnamon Stick: small one
  • Green cardamoms: 2
  • Cloves: 2
  • Ginger garlic paste: 1 & ½
  • Red Chili powder: 1 ½
  • Garam masala: 1 tsp
  • Salt as needed
  • Water: 1 to 1 ¼
  • Kasuri methi: ¼ tsp
  • Chopped coriander leaves: 1 tbsp

Method

Step 1

Take a blender and add chopped onion it. Start it and make a fine paste.

Step 2

Set aside in a bowl

Step 3

Make a fine paste of tomatoes in same.

Step 4

Set this aside, we will use it later

Step 5

Prick boiled eggs with fork. Take a pan and heat oil. Fry eggs until it become golden.

Step 6

Take the same pan & saute cinnamon, bay leaf, cardamom and cloves.

Step 7

Add the onion paste, as we made before. Saute until the paste turns golden and raw smell goes off.

Step 8

Add ginger garlic paste and fry until raw smell goes off.

Step 9

Add tomato paste & sauté until raw smell goes off.

Step 10

Add turmeric, garam masala, salt & red chili powder.

Step 11

Fry it until it starts to smell good & oil begins to separate from masala. Take it for 2-3 minutes.

Step 12

To make a gravy, pour water in it. Boil it until it becomes thicker & oil begins to separate. To check the salt, taste it. If it requires, add more.

Step 13

Add fried eggs & cover. Add kasuri methi if you want to use it. Stir well. Cook it for 2-3 minutes on medium temperature.

Serve it with veg pulao, jeera rice, pudina rice or roti. Surprise your family member with such delicious Punjabi egg curry
