Chicken Fry Biryani Recipe In Andhra Style

There is one of the most unique and delicious biryani dish that you see in Andhra restaurants. In this dish, a spicy and hot chicken is layered in flavored. Chicken fry or vepudu is prepared first and then layered with dum cooked biryani.

Ingredients

  • Oil: 1 tbsp
  • Green chillies: 1 piece
  • Cinammon: 1, Cloves :2, Green cardamom:1
  • Cashews: 12 to 15
  • Marination:
  • Chicken with boneless: 500gm
  • Lemon juice: 1 ½ tbsp
  • Turmeric: ¼ tsp
  • Red Chili Powder: 1 tbsp.
  • Large Onions: 2
  • Ginger garlic paste: 1 & ½
  • Solid Ghee: 1 tbsp
  • Salt as needed
  • Garam Masala Powder
  • Coriander: 2 tbsp
  • 2 inch thin cinnamon stick
  • Cloves 6 to 8
  • Green elachi: 4
  • Jaalakara: ½ tsp
  • Fennel Seed: ¼ tsp (optional)
  • Biryani Ingredients:
  • Rice: 2 cups
  • Water: 3.5 cups minimum
  • Oil: 2 to 3 tbsp
  • Salt as needed
  • Red chili powder: ½ tsp
  • Biryani masala: 1 ½ tsp
  • Salt as needed
  • Coriander powder:1 tsp
  • Yogurt: 1/4 cup
  • To Grind:
  • Sliced Onion: 1 cup
  • Garlic cloves: 4
  • Ginger garlic paste 1.5 tsp
  • Pudina: ½ cup
  • Coriander: ½ cup
  • To Temper:
  • 1 star anise
  • Bay leaf:1
  • Shahi jeera: ½ tsp
  • Cloves: 4
  • Green cardamoms:3

Method

Step 1

As mentioned In marination ingredients; marinate the chicken

Step 2

Cook chicken on low flame, Till chicken become soft and tender. If chicken turns dry during cooking, sprinkle 2 tbsp water

Step 3

take a pan, add oil and heat it at medium flame. Add cooked chicken & cashew powder. Now fry it until moisture evaporates & masala sticks on to it. Keep it aside.

Biryani Recipe:

Saute bay leat in oil; add 4 cloves, 3 green cardamoms, cinnamon stick as mentioned in ingredients, star anise, ¾ tsp shahi jeera.

Step 6

Add ground paste & sauté it until the raw smell goes off.

Step 7

Add fresh curd, masala, coriander powder, red chili powder, turmeric & sauté until the oil become separate from it.

Step 8

Adjust salt as needed & pour water

Step 9

Add rice and cook it on medium heat until rice become soggy (nearer about 90%)

Step 10

Now seal the pot with foil and lower the flame completely.

Step 11

Dum it on hot tawa for 13-14 minutes.

Step 12

Rest it for 10 to 15 minutes

Step 13

Now recipe is ready, Just need to layer out Chicken Fry Biryani.

Step 14

Take a serving bowl and transfer half of the rice.

Step 15

Add half of chicken fry over the rice like creating layer

Step 16

Repeat the process once more.

Serve it with raita and salan.
